Measuring iron solubility using lambda max

I am interested in whether iron (Fe+2 & Fe+3) forms chelates with simple sugars thereby increasing solubility at a various range of Ph's, and one of my supervisors has suggested using atomic mass spectrometry and changing lambda max to assess this - my own back round is in the medical and biological sciences and I don't understand the principles behind how such an investigation would work. Any insights appreciated - I'm not a chemist just an MD.
