I am looking to buy a book on surface science.  Ideally the book would cover the organic chemistry of surfactants, emulsion stability/breaking, wetting of surfaces, etc.  I am hoping to apply it to my work in oil field production.  Any suggestions?

The sort of book you're after will depend on your level of experience in the field. The basic ones are by DJ Shaw and Hunter (can't remember the names but they will be on amazon) and the higher levels are by Cosgrove or something like the Handbook of applied colloid science.
