Requirements for Leidenfrost effect?

Is there a certain volume of liquid to surface area of heating surface that must be present for the Leidenfrost effect to take place?  I ask, because I know I can dip my hand into liquid nitrogen briefly without problem, but if it boils and pops onto my skin, I get burned.  Same thing at the dermatologist - they squirt liquid nitrogen onto warts to kill the skin.  I assume it's an extremely narrow stream, the basic idea being that the liquid nitrogen instantly boils and carries heat away before the gaseous nitrogen is able to form a protective pocket?
