dehydroascorbic acid is the reduced form of ascorbic acid.
I am wondering if you can create this in your kitchen starting with ascorbic acid, and adding a reducing agent to it?
I found a reference somewhere online that adding something called acid washed norit (which I believe is a purified form of activated charcoal) to ascorbic acid will convert it to dehydroascorbic acid
anybody have any input on this? For instance how much norit would you add to how much ascorbic acid? And how would you mix them? Would you simply add them to water and heated up a bit?
Any thoughts?
