how to convert ascorbic acid into dehydroascorbic acid ?
« on: November 04, 2010, 10:53:22 AM »
dehydroascorbic acid is the reduced form of ascorbic acid.

I am wondering if you can create this in your kitchen starting with ascorbic acid, and adding a reducing agent to it?

I found a reference somewhere online that adding something called acid washed norit (which I believe is a purified form of activated charcoal) to ascorbic acid will convert it to  dehydroascorbic acid

anybody have any input on this? For instance how much norit would you add to how much ascorbic acid? And how would you mix them? Would you simply add them to water and heated up a bit?

Any thoughts?

Are you sure you haven't got your oxidised and reduced forms muddled?

Lots of thoughts, but none I'm going to share with you!
Do it in your kitchen, what are you into?

First of all the conversion of ascorbic acid to dehydroascorbic acid is achieve through oxidation by the conversion of the 2 hydroxyl groups to 2 carbonyl groups. I've never heard of using activated charcoal, but in a lab setting ascorbic acid can be oxidized with O2 in C5H5N(aq) catalyzed by Zn2+.

is there any way to do it at home in the kitchen?

okay I figured it out

You just add iodine to an water-based mixture of vitamin C

viola! You have dehydroascorbic acid
