Excuse me, but I have a very basic question. I don't understand completely why some atoms and/or compounds do not ionize. Can you explain it on some examples.

ionize, as in form charged ions in water you mean?
In vacuum you
can
ionize all practical elements as far as I know, though some cost more energy than others
