Hi, I'm doing a chemistry project on caffeine. One of my experiments of this project is taking most of the caffeine out of tea. The way this is done is by placing the tea in hot water for several minutes. But I need someone to explain to me, chemically, why does steeping tea in hot water reduce its caffeine content? Caffeine is soluble in water. And as the temp increases, the solubility goes up.
It is pretty standard for most water soluble chemicals.
