however i don't know where to start especially how to create a high humidity environment.
A dish of water in a sealed container will do that.
for the low humidity environment i was thinking of sticking some type of desiccant with an indicator into a sealed container or bag, like silica.....but if anyone has a better suggestion i'm all ears.
Silica get would do (and is commonly used for) the job. Other possibilities are Calcium Sulfate (aka Drierite, which is also sold mixed with indicator), calcium chloride, sodium chloride, even rice. There are many.
