i have sneaky suspicion that after the CN takes the place of I it switches around to the back of the carbon chain but thats as far as i can get.

You get backside attack in Sn2 displacements, in your case you don't define the stereochemistry. But the CN will end up on the opposite side to the I.
Development Chemists do it on Scale, Research Chemists just do it!
