By what conditions can anhydrides be reduced and what are the products?

That depends on the anhyride. You need to be more specific.

For example acetic acid anhydride.

For example acetic acid anhydride.
Sodium borohydride, lithium aluminium hydride, di-isobutylaluminium hydride and so on. If the reducing agent is strong enough you will get the alcohol produced.

I don't recall ever seeing a symmetric anhydride giving two aldehydes, but there are many biochemical examples of mixed anhydrides giving an aldehyde plus an acid. Esters can be reduced to aldehydes, depending on the alcohol and reductant used.
