Hey everyone i have a question, I have a oil obtained by soxhlet extraction using ethanol. What would i do to obtain crystals out of this oil. Keep in mind the crystals will be intended for consumption so i cannot use any harsh ingredients.

If you look at Wikipedia, you can see some examples of good solvents and bad solvents, so you could make good crystals.  You may want to look for more, because those choices are a little toxic.  But you can always re-recrystalize, or try to sublime under vacuum.  Although, just because people really like hot peppers, is no guarantee that this substance is safe in crystal form.  You'll probably be finding yourself working in a hood while wearing a full face respirator.
