how can I determine Z or E configuration of schiff bases using NMR

If disubstituted, check the coupling constants. They are quite different.

if the compound is the result of benzaldehyde and p-anisidine reaction, how can I apply that, what is the difference in coupling constants

You cannot compare coupling constants for N-benzylideneanisidine - the imine H does not couple to anything. You need to look at through space interactions rather than through bond. Look up the nuclear Overhauser effect.
