Is there a substance that does not dissolve in water but does so in saliva. Sort of like medical gel capsules.

Basically that can be eaten as well but is not dissolve from water alone.

Potato flour, it might take a while to break down in the mouth but it will.

In other words: starch, basically. Although I'd argue this is a reaction with enzymes in saliva rather than simple dissolution.

Some starch is quite water soluble. Apparently potato starch isn't.

I agree though, this is not a disolution it is a destructive process. Best I can do I'm afraid.

Edible rice paper also dissolves in saliva but not in water.
