Hello,
I am looking for the reaction of milk casein with HCl in order to get acid casein. Does anybody know the stoichiometry?

Doesn't look to me like the acid casein is made with the hydrochloric acid.

Hi Borek,

You can use hydrochloric acid to acidifying skim milk to the isoelectric point for the production of acid casein.

Well, something like that! I have already found that the reaction must be
casein + 2HCl

acid casein + CaCl2
