Reaction of Methylcyclohexane with Lithium?

Would it just be an organometallic reagent with the lithium being attached to the methyl group of the cyclohexane ring? (Would this even be possible since that would make 5 bonds around the methyl group carbon, so would a reaction just not occur?)

Usually such organometallic species are made by a halogen-metal exchange reaction. The carbon metal bond is significantly ionic in character. The whole system being stabilised by the solvent molecules, usually THF.

So this would be one of the few cases in which it would be okay for the methyl group of the cyclohexane to have 5 valences?

It does not have a 5 valent carbon atom. See here for a description of methyl lithium, your compound is probably similar.
