Hi all, I take choline bitartrate for its cognitive benefits. But the choline bitartrate solution is very acidic, and very difficult to drink. So I decided to put baking soda in the solution to neutralize the acid.  I am wondering if this is safe for the choline and for me.  Gas is released in the form of bubbles when I mix choline bitartrate, water, and sodium bicarbonate. I'm guessing it's  carbon dioxide from the unstable carbonic acid. Could someone please help me with the reaction that takes place between choline bitartrate and sodium bicarbonate?
