So I'm compiling all the pathways and just adding notes on the tricky ones, I remember Nitriles doing this because the CN- ion has carbon, but are there any other pathways I'm leaving out?

This is a very general question because any C-C bond forming reaction could potentially result in a longer carbon chain - there are an enormous number of them.

Maybe what you're interested in is homologation reactions?

Reacting grignard reagent with nitrile creates ketone, but I think the 1st one suits your question better
