Temperature of liquid nitrogen in the room temperature

Hello, my name is Peter and I am professional chef from Poland. We are using liquid nitrogen in molecular gastronomy and I have small question. Liquid nitrogen is -195,8 degrees Celsius (-320 F) when it's inside dewar/container. But what happens when we put it outside to the metal vessel for example in the room temperature of 20 Celsius degrees (68 F), will it be still -195,8 Celsius (-320 F) inside this vessel before it turns into a gas or will it be little heated before? I mean what temperature would thermometer shows when we measure it inside the metal bowl?

I've heard from somebody that it is heated little bit and it would be around -175 or -180 Celsius (-283 or -292F)  degrees outside the dewar.

Could anyone help me with this?

Forgive me my english and lack of knowledge in chemistry.

Inside dewar it can be colder, when poured out its temperature will go up to -195.8°C which is the boiling point - and it won't get warmer than that.

Boiling hot liquids can overheat... slightly. 15 or 20 Celsius above boiling point would be unusually much.
