Can anyone give me a link that has an energy diagrams for dehydration or hydration reactions? I can't find any in my text.

Yea, million times, but never with just the word diagram like yours, I put dehydration, hydration, energy diagram and never found anything sufficient. But I did with the keywords you used and I may have found something useful. For anyone else in the future:
