How would you usually draw dihydrates?

Is the right way of drawing C2H2O4 . 2 H2O basically just drawing C2H2O4, then having 2 H2O's just floating around?

Depends on what you are really trying to draw. Water molecules in crystals are never just randomly oriented, either because they are dipoles or because of the hydrogen bonding (or because of both).

Typically, when a large molecule is drawn structurally, the water of hydration is just drawn nearby. Like this image from PubChem. The Merck index is similar for pharmaceuticals.
