Why does 1 mole of magnesium produce 1 mole of hydrogen? (Think of the bonding; your answer must discuss oxidation numbers or electrons.)

You should show that you have attempted to answer the question first (see
rules
).
A simple way to explain it is by half equations.
Balance these (
this
website is helpful):
__Mg --> __Mg
2+
+ __e
-
__H
+
+ __e
-
--> __H
2
Then write the overall equation to show how 1 mole of Mg produces 1 mole of H
2
.

I used to remember it by ratio`s of each element/compound.
So if you do as

has stated, you`ll get a balanced equation including H
2
gas - 1 mole.
1 mole of Mg reacts with 2 moles of H
2
O to give 1 mole of Mg(OH)
2
and 1 mole of H
2
