Starting AP Chem next year, and only learned how to solve stoichiometry problems with the table method. Should I learn dimensional analysis in case it has applications that are better than the stoich table?

Dimensional analysis is useful in other kinds of chemistry-related problems. Getting the dimensional analysis correct is necessary but not sufficient to solve dilution problems correctly IMO.
